- 1 LB OF LEAN minced beef - OR - USE UP ANY COLD MEAT LEFTOVERS FROM A roastED JOINT shopping list
- 2 onions shopping list
- 2 STICKS celery shopping list
- mushrooms - NUMBER DEPENDING ON SIZE shopping list
- 2 GRATED carrots shopping list
- A HANDFUL OF frozen peas shopping list
- 2 chopped tomatoes shopping list
- A GOOD SQUEZE OF tomato puree shopping list
- A HANDFUL OF dried fruit, sultanas PREFERABLY shopping list
- A SMALL CUT UP EATING applE shopping list
- A FEW CUT UP nuts, AS AVAILABLE shopping list
- 2 garlic cloves shopping list
- A GOOD PINCH OF mixed herbs shopping list
- 1 DESERTSPOON OF HOT curry powder. - ADJUST TO YOUR TASTE. shopping list
How to make it
- USE LARGE PAN
- IF USING FRESH MINCE, LIGHTLY BROWN FOR A FEW MINUTES IN OLIVE OIL
- IF USING LEFT OVER MEAT, CUT INTO REALLY SMALL PIECES
- CUT UP ALL THE REST OF THE INGREDIENTS AS SMALL AS POSSIBLE
- ADD ALL TO THE PAN OF MEAT, PLUS THE GRATED CARROT AND HERBS, AND TOMATO PUREE.
- STIR IN THE CURRY POWDER, SO THAT THE IN GREDIENTS ARE WELL COATED.
- ADD TO THE PAN AN AMOUNT OF COLD WATER TO JUST COVER THE INGREDIENTS, NOT TOO MUCH.
- BRING TO THER BOIL, STIRRING. WHEN AT THIS STAGE I ALWAYS ADD ABOUT A DESSERTSPOON OF BEEF GRAVEY BROWNING TO HELP THICKEN.
- THEN PUT THE LID ON YOUR PAN AND TURN DOWN THE GAS VERY LOW SO THAT IT WILL SIMMER GENTLY FOR 45 MINUTES. CHECK THAT IT IS NOT STICKING AND ALSO THAT THE MIXTURE HAS THICKENED SUFFICIENTLY. iF NOT, USE A LITTLE MORE GRAVEY BROWNING OR MAKE UP A SMALL AMOUNT OF CORNFLOUR WITH COLD WATER - ADD TO MIXTURE AND STIR WELL.
- I CAN ASSURE YOU THIS IS DELICIOUS WHEN SERVED ON A BED OF COOKED RICE.
- MY SON HAS ALWAYS LOVED THIS BUT HE PREFERS IT WITHOUT THE DRIED FRUIT.
