Crunchy Parmesan Chicken Salad

- 4 x chicken breasts trimmed and sliced into fillets shopping list
- 3 eggwhites, lightly beaten shopping list
- 2 cups finely grated parmesan cheese shopping list
- 200g baby spinach leaves shopping list
- 1 lebanese cucumber shopping list
- 240g yellow tear drop tomatoes, halved shopping list
- 2 green scallions, finely slices shopping list
- 1/4 cup basil leaves shopping list
- 1/4 cup olive oil shopping list
- 2 tbspns lemon juice shopping list
- salt and pepper to taste shopping list
How to make it
- Dip chicken in egg white and press into parmesan.
- Place on baking tray and cook under preheated, hot grill for 5 - 8 minutes or until crunchy and golden.
- Place leaves, cucumber, tomatoes and scallions in bowl and toss to combine.
- Place basil, oil, lemon and salt and pepper in small bowl and whisk
- Divide salad amongst four plates, top with chicken and dress with basil oil.
- Enjoy!
