Crunchy Parmesan Chicken Salad Recipe
A great easy salad that we often have as a main meal when the weather is hot and I don';t want to cook. The chicken is so tasty that you'll want to make more if it and eat it on it's own!

Ingredients
  • 4 x chicken breasts trimmed and sliced into fillets
  • 3 eggwhites, lightly beaten
  • 2 cups finely grated parmesan cheese
  • 200g baby spinach leaves
  • 1 lebanese cucumber
  • 240g yellow tear drop tomatoes, halved
  • 2 green scallions, finely slices
  • 1/4 cup basil leaves
  • 1/4 cup olive oil
  • 2 tbspns lemon juice
  • salt and pepper to taste

Directions
  1. Dip chicken in egg white and press into parmesan.
  2. Place on baking tray and cook under preheated, hot grill for 5 - 8 minutes or until crunchy and golden.
  3. Place leaves, cucumber, tomatoes and scallions in bowl and toss to combine.
  4. Place basil, oil, lemon and salt and pepper in small bowl and whisk
  5. Divide salad amongst four plates, top with chicken and dress with basil oil.
  6. Enjoy!
