  • DIRECTIONS:
  • 1. Put lime juice, olive oil, garlic, salt, and oregano into a large resealable plastic bag. Shake the sealed bag until the ingredients are mixed well. Taste the marinade for tartness. If it's too tart, add a little extra oil. Not enough zing, add a little more lime. The garlic and salt flavors should also be up front, yet not too overpowering. Place the tenderloins in the bag, seal, and turn to coat. Marinate in the refrigerator for up to 2 to 5 hours.
  • 2. Preheat the grill to medium heat.
  • 3. Slowly oil the grill grate, and get rid of the marinade. Grill the tenderloins for up to 20 to 30 minutes, only turning once, or to your desired doneness.
