Ingredients
  • DRESSING:
  • 6 cloves of garlic, peeled
  • pint of milk
  • 4 anchovy fillets
  • olive oil
  • vinegar (you can experiment a bit with the flavour you prefer here)
  • SALAD: (use whatever combination and quantities appropriate for 4 people)
  • Carrots, thinly sliced
  • Raw beets, thinly sliced
  • Celery cut into sticks
  • Cauliflower florets
  • Fennel, thinly sliced
  • Radish, thinly sliced

Directions
  1. In a heavy based saucepan bring milk and garlic to boil.
  2. Add anchovies (these will melt into sauce and don't taste fishy at all!), reduce heat and simmer.
  3. When milk has curdled, blend with a stab blender or electric mixer until smooth.
  4. While blending, slowly add a generous drizzle of oil and vinegar to taste.
  5. Toss vegetables in large bowl and dress immediately prior to serving.
