How to make it

  • In a heavy based saucepan bring milk and garlic to boil.
  • Add anchovies (these will melt into sauce and don't taste fishy at all!), reduce heat and simmer.
  • When milk has curdled, blend with a stab blender or electric mixer until smooth.
  • While blending, slowly add a generous drizzle of oil and vinegar to taste.
  • Toss vegetables in large bowl and dress immediately prior to serving.
