Tomato-Onion Phyllo Pizza Recipe
This is very good. I think my kids like it just because it's called pizza! They don't seem to mind there's no pepperoni.

Ingredients
  • 5 tbsp butter or margarine, melted
  • 7 sheets phyllo dough (18in x 14 in
  • 7 tbsp grated parmesan cheese, divided
  • 1 cup (4 oz) shredded mozzarella cheese
  • 1 cup thinly sliced onion
  • 7 to 9 plum tomatoes, sliced
  • 1 1/2 tsp minced fresh oregano or 1/2 tsp dried oregano
  • 1 tsp minced fresh tyme or 1/4 tsp dried thyme
  • salt and pepper to taste

Directions
  1. Brush a 15 x 10 x 1 inch baking pan with some of the melted butter
  2. Lay a sheet of phyllo in pan, folding edges in to fit (keep remaining dough covered wth waxed paper to avoid drying out)
  3. Brush dough with butter and sprinkle with 1 tbsp parmesan cheese
  4. Repeat layers five times, folding edges for each layer
  5. Top with remaining dough, folding edges to fit pan
  6. Brush with remaining butter
  7. Sprinkle with mozzarella cheese
  8. Arrange onion and tomatoes over the cheese
  9. Sprinkle with oregano, thyme, salt, pepper and remaing parmesan cheese
  10. Bake at 375 degrees for 20-25 minutes or until edges are golden brown
