How to make it
- In a fairly good sized bowl mix together mayo and sour cream.
- Drain the liquid from the Hot Rotel and mix both cans with the mayo mixture.
- Lastly, add the shredded cheese a handful at a time until it is evenly incorporated.
- Refrigerate for 30 to 60 minutes to chill. I like to let it sit in the fridge overnight so that the flavors can mingle.
- Serve with tortilla or corn chips. Don't let this stay out of the fridge for more than a few hours as it takes on a gross scent when left in the heat.
