Cauliflower Cheese Casserole

- 1 head of cauliflower shopping list
- 1 small chopped red pepper shopping list
- 1 small chopped green pepper shopping list
- 1 clove garlic, minced or mashed shopping list
- 2 tbs cornstarch shopping list
- 1 1/2 cups milk shopping list
- 3 tbs margarine shopping list
- 1 tsp salt shopping list
- 1/4 tsp pepper shopping list
- 2 tbs fine dry bread crumbs shopping list
- 1 tbs melted margarine shopping list
- 1 cup shredded Monterey Jack or other cheese shopping list
How to make it
- Seperate cauliflower into flowerettes.
- Drop into boiling water and cook for 5 mins or til tender crisp; drain. Arrange in shallow, well buttered 2 qt baking dish.
- Heat 1 tbs margarine in frying pan. Add peppers and garlic. Saute for 1 1/2 mins. Sprinkle over cauliflower.
- Mix cornstarch into milk. Add 2 tbs margarine to frying pan. Stir in milk and cornstarch mixture. Cook, stirring til thickened. Add salt, pepper and cheese. Stir until cheese is blended in. Pour over veggies.
- Mix bread crumbs and butter; sprinkle on top of casserole. Bake at 350ยบ for 25 mins.
