Blueberry Maple Coffee Cake

- 2 cups all purpose flour shopping list
- 1 Tablespoon baking powder shopping list
- 1 teaspoon salt shopping list
- 1/3 cup unsalted butter, melted shopping list
- 1 large egg shopping list
- 1 cup milk shopping list
- 2 teaspoons maple flavouring shopping list
- 3/4 cup granulated sugar shopping list
- 2 cups fresh or frozen blueberries shopping list
- For the Glaze-- shopping list
- 1 cup confectioner's sugar shopping list
- 2 Tablespoons milk shopping list
- 1 Tablespoon unsalted butter, melted shopping list
- 1 teaspoon maple flavouring shopping list
How to make it
- Preheat oven to 350 degrees and coat a 9x13 baking pan with non-stick spray.
- Whisk the flour, baking powder and salt together in a large bowl. Set aside.
- In a second bowl, mix together the melted butter, egg and maple flavouring; add the sugar and stir well.
- Make a well in the dry ingredients and add the wet ingredients to the dry all at once. Stir until just combined.
- Spread half the batter in the pan and sprinkle over half the berries. Spread the remaining batter over the berries and sprinkle the remaining berries evenly over the top.
- Bake for 35 to 45 minutes or until a toothpick inserted in the center comes out clean.
- While cake is baking, prepare the glaze by mixing together the glaze ingredients until smooth.
- Cool the cake a little after it's done baking, then drizzle the glaze over the top.
