Quick Pasta And Sauce Recipe
An easy sauce for any pasta (we like gemelli) which takes twenty monuts to make

Ingredients
  • 2 cans Muir Glen fire roasted tomatoes
  • 3 hot Italian sausages, skinned and chunked
  • 2 tb olive oil
  • 1 medium onion sliced and diced
  • 2 cloves garlic diced fine
  • 4-5 pickled cherry peppers, seeded and chopped
  • kosher salt to taste
  • freshly ground papper to taste
  • splash of red wine
  • Pasta for 4
  • Pamesano reggiano grated

Directions
  1. Skin sausages and chop into bite size pices or tear apart if you're in a hurry. Cook over med low heat with 1 tsp olive oil in preheated pan
  2. Prep onions, garlic and cherry peppers while sausage cooks.
  3. Open cans of tomatoes.
  4. Remove sausage and set aside.
  5. Add remaining olive oil to pan and cook onions until limp and slighly browned.
  6. Add garlic. Cook 1 minue more.
  7. Add salt and pepper to cooked onions and garlic.
  8. Add sausages and tomatoes. Add chpped pickled peppers to sauce. Simmer for 10,minutes.
  9. Heat water for pasta, bring to a boil. Add pasta and cook until al dente
  10. Drain, reserve 1/2 cup cooking water.
  11. Add 1/2 cup cooking water to pan and splash of red wine. Stir.
  12. Plate pasta. Add sauce and grated cheese.
  13. Serve with romaine salad, Your choice of dressng, but we like classic oil and vinegar, Warm, crusty Italian bread, A glass of wine would not go amiss.
