Ingredients

1 1/3 cup elbow macaroni

4 tsp. salt divided

1 1/3 cup of shredded sharp cheddar cheese

2/3 cup bread crumbs

5 1/3 TBSP. butter melted

1/4 cup finely chopped green pepper

2 tsp. chopped onion (optional)

2 cups scalded milk

4 egg yolks beaten

4 egg whites, stiffly beaten

Directions

Preheat the oven to 350 degrees. Spray 8 individual baking dishes with PAm.

Bring 3 Quarts water to a boil add a few drops oil to water add macaroni and 2 tsps. salt. Boil, till macaroni is tender. drain.

Combine cheddar cheese,bread crumbs,butter,green pepper,onions,and remaining salt in a large bowl.

Add milk to a sauce pan over medium high heat and heat until small bubbles form around the edges of the pan. Or heat to 180 degrees. Add milk to the cheese mixture and mix well. Stir in egg yolks and macaroni and fold in egg whites.

Spoon macaroni mixture into baking dishes place dishes into a pan of hot water and bkae 30 minutes.
