How to make it

  • Combine all the above ingredients and marinade it for 6-12 hours.
  • Grill over high heat flipping it so each side cooks twice.
  • Cook about 7 minutes for the first two exposures, then 5-7 on the last two (depending on heat and desired degree of doneness)
  • Then let it rest for 15 minutes before slicing across the grain.
  • I also make a separate half-batch of the marinade and boil it until it is reduced by 1/3 and use it as a dipping sauce.
