My Dads Lentil Dish

- 1 cup dried lentils shopping list
- 5 cups veggie stock shopping list
- 1 tsp. salt shopping list
- 1/4 cup olive oil shopping list
- 2 cups chopped white onion shopping list
- 3 garlic cloves minced shopping list
- 1/4 tbsp. cayenne shopping list
- 2 bay leaves shopping list
- 1 cup raw bulgar shopping list
- 1/4 cup chopped parsley shopping list
- 2 cups chopped tomatoes (from a can) shopping list
- 1/4 cup tomato paste shopping list
- 2 cups chopped spinach or other green such as kale or collard greens shopping list
- pinch of dried rosemary shopping list
- salt and pepper to taste shopping list
How to make it
- Rinse lentils
- Bring lentils to a boil, in veggie stock, lightly salting
- Simmer, covered, for about 20 minutes
- MEANWHILE
- Heat olive oil in sauce pan, saute onions until translucent, add garlic, cayenne, bay leaves and raw bulgar
- Stir on medium heat until lightly browned
- Mix in parsley, tomatoes, tomato paste
- Pour all this into lentils and veggie stock
- Simmer for 25 minutes until lentils tender
- In last couple minutes throw in spinach or whatever greens you are using
