My Dads Lentil Dish Recipe
My dad makes this; it is very satisfying and warm

Ingredients
  • 1 cup dried lentils
  • 5 cups veggie stock
  • 1 tsp. salt
  • 1/4 cup olive oil
  • 2 cups chopped white onion
  • 3 garlic cloves minced
  • 1/4 tbsp. cayenne
  • 2 bay leaves
  • 1 cup raw bulgar
  • 1/4 cup chopped parsley
  • 2 cups chopped tomatoes (from a can)
  • 1/4 cup tomato paste
  • 2 cups chopped spinach or other green such as kale or collard greens
  • pinch of dried rosemary
  • salt and pepper to taste

Directions
  1. Rinse lentils
  2. Bring lentils to a boil, in veggie stock, lightly salting
  3. Simmer, covered, for about 20 minutes
  4. MEANWHILE
  5. Heat olive oil in sauce pan, saute onions until translucent, add garlic, cayenne, bay leaves and raw bulgar
  6. Stir on medium heat until lightly browned
  7. Mix in parsley, tomatoes, tomato paste
  8. Pour all this into lentils and veggie stock
  9. Simmer for 25 minutes until lentils tender
  10. In last couple minutes throw in spinach or whatever greens you are using
