How to make it

  • Rinse lentils
  • Bring lentils to a boil, in veggie stock, lightly salting
  • Simmer, covered, for about 20 minutes
  • MEANWHILE
  • Heat olive oil in sauce pan, saute onions until translucent, add garlic, cayenne, bay leaves and raw bulgar
  • Stir on medium heat until lightly browned
  • Mix in parsley, tomatoes, tomato paste
  • Pour all this into lentils and veggie stock
  • Simmer for 25 minutes until lentils tender
  • In last couple minutes throw in spinach or whatever greens you are using
