Monkfish Kabobs With Bacon Green Pepper And Cherry Tomatoes Recipe
This is such a simple way to entertain from the grill. In lousy weather, you can broil them as well. Simple is sometimes the best.

Ingredients
  • 2 pounds monkfish, cut in 1 1/2 inch chunks
  • 6 to 8 slices thick cut bacon, cut in thirds
  • 1 to 2 large green bell peppers, cut in 1 1/2 inch squares
  • 20 cherry tomatoes
  • 20 fresh mushroom caps
  • salt and pepper
  • olive oil
  • lemon juice
  • ground cumin

Directions
  1. You will want your grill or broiler at a medium heat.
  2. Skewer monfish, bacon (bacon should be folded in half and skewered through the lean portion, not the fat), green pepper, tomatoes and mushrooms.
  3. Brush kabobs with oil and sprinkle with salt, pepper and cumin.
  4. Drizzle with lemon juice.
  5. Grill or broil fairly slowly, turning every 3 to 4 minutes or as each side browns. In all, grilling should take about 15 minutes.
  6. When done, the monkfish should be tender and the veggies softened.
  7. This can be served with melted butter if desired (and I always desire.)

I have never had monk fish, or even seen it before. The recipe sounds great.
