- 1 eggplant (sliced thinly lengthwise) shopping list
- 2 thinly sliced pancetta per roll (3 oz pkg Columbus pancetta) shopping list
- 1 leaf basil per roll shopping list
- 1 cube mozzarella per roll (approx 6 oz which allows leftover to be sprinkled on top) shopping list
- 1 cup marinara sauce shopping list
How to make it
- Broil the eggplant slices for about 5 minutes per side.
- Lay the eggplant slice out, top with a slice of pancetta, a basil leaf and a cube of mozzarella.
- Roll the eggplant up and place it in a baking dish.
- Top the eggplant rolls with the marinara sauce. Sprinkle leftover mozzarella on top.
- Bake in a preheated 350F oven for about 20-30 minutes.
- Makes 8 rolls (2 per serving)
