How to make it

  • Broil the eggplant slices for about 5 minutes per side.
  • Lay the eggplant slice out, top with a slice of pancetta, a basil leaf and a cube of mozzarella.
  • Roll the eggplant up and place it in a baking dish.
  • Top the eggplant rolls with the marinara sauce. Sprinkle leftover mozzarella on top.
  • Bake in a preheated 350F oven for about 20-30 minutes.
  • Makes 8 rolls (2 per serving)
