Ingredients
  • 2 (1 pound) pork tenderloins
  • 1 1/2 cups fresh lime juice
  • 6 tablespoons dried oregano
  • 3/4 cup olive oil
  • 2 teaspoons salt
  • 6 cloves garlic, sliced

Directions
  1. Pour lime juice, olive oil, garlic, salt, and oregano in large resealable plastic bag. Shake and churn bag until marinade is mixed. Should taste of tart. Add more oil if too tart. Add more lime for more punch. Make sure garlic and salt are not overpowering, yet are clearly present. Position meat within bag, seal, and massage around meat to coat. Marinating should take 2-5hrs in refrigerator.
  2. Start grill and preheat to medium heat.
  3. Brush oil on the grill grate lightly, and dispose of marinade. Grill pork for 20-30 mins, flipping once and grill to desired doneness.
