bacon cornmeal muffins

- 8 slices bacon shopping list
- 4 tbsp butter shopping list
- 4 tbsp margarine shopping list
- 1 cup flour shopping list
- 1 tbsp baking powder shopping list
- 1 tsp sugar shopping list
- 1/4 tsp salt shopping list
- 1 1/2 cup cornmeal shopping list
- 1 cup milk shopping list
- 2 eggs shopping list
How to make it
- Preheat oven to 400 degrees. Grease muffin tins
- Fry bacon until crisp. Drain. Cut into small pieces, set aside.
- Gently melt the butter and margarine and set aside.
- Mix flour, baking powder, sugar and salt in a large bowl. Stir in cornmeal, then make a well in the center.
- In a saucepan, heat the milk to lukewarm. In small bowl, lightly whisk the eggs, then add to the milk. Stir in the melted fats.
- Pour milk mixture into the center of the well and stir until smooth and well blended.
- Fold in bacon.
- Spoon the batter into the prepared cups, filling them halfway.
- Bake 20 minutes or until risen and lightly colored.
- Serve hot or warm.
