How to make it

  • Preheat oven to 400 degrees. Grease muffin tins
  • Fry bacon until crisp. Drain. Cut into small pieces, set aside.
  • Gently melt the butter and margarine and set aside.
  • Mix flour, baking powder, sugar and salt in a large bowl. Stir in cornmeal, then make a well in the center.
  • In a saucepan, heat the milk to lukewarm. In small bowl, lightly whisk the eggs, then add to the milk. Stir in the melted fats.
  • Pour milk mixture into the center of the well and stir until smooth and well blended.
  • Fold in bacon.
  • Spoon the batter into the prepared cups, filling them halfway.
  • Bake 20 minutes or until risen and lightly colored.
  • Serve hot or warm.
