Sweet and spicy beet salad

- 2 large beets shopping list
- 6 medium garlic cloves, minced shopping list
- 3/4 cup walnuts, coarsely chopped shopping list
- 10 pitted prunes, coarsely chopped shopping list
- mayo or Miracle Whip shopping list
- salt to taste shopping list
How to make it
- Cover beets (in skin) with cold water in a pot and cook until knife pierces them through easily - about 45 min to 1 hour.
- Cool down until manageable, peel, and shred in the food processor, or using a coarse hand shredder.
- Mince the garlic, add to the beets.
- Coarsely chop the prunes and add to the beets
- Mix in the walnuts. Add salt, if desire.
- Add mayo of your choice and mix thoroughly.
- Put in the refrigerator to cool down completely.
- Serve cold.
