How to make it

  • Cover beets (in skin) with cold water in a pot and cook until knife pierces them through easily - about 45 min to 1 hour.
  • Cool down until manageable, peel, and shred in the food processor, or using a coarse hand shredder.
  • Mince the garlic, add to the beets.
  • Coarsely chop the prunes and add to the beets
  • Mix in the walnuts. Add salt, if desire.
  • Add mayo of your choice and mix thoroughly.
  • Put in the refrigerator to cool down completely.
  • Serve cold.
