How to make it

  • Cook fettuccine according to package directions.
  • Heat a small saute pan over medium heat.
  • Drizzle in olive oil, and add the mushrooms, scallion and the pepperoni.
  • Cook until mushrooms are soft.
  • About 5 minutes before the pasta is done, add the spinach to the mushroom pan and wilt.
  • Drain pasta and drizzle with a little olive oil.
  • Add seasonings and everything else.
  • Serve warm.

    I love to put greens in my pasta. Sprinkle a little grated parmesan on my plate at the table and I'm there. =)
