Pepperoni Pasta Recipe
I put this together to use up some odds and ends in my kitchen and was surprised at how tasty it was. This could also work well as a light lunch or side pasta with a main meat course.

Ingredients
  • 4 button mushrooms, sliced
  • 12 slices pepperoni (I use turkey pepperoni), sliced into slivers
  • 1 scallion, chopped
  • 1 1/2 C. fresh baby spinach
  • 1 oz. Fettuccine noodles (or whatever you like for a single serving)
  • olive oil
  • 1/4 tsp. dried thyme
  • 1/4 tsp. garlic powder
  • 1/8 tsp. fresh ground black pepper

Directions
  1. Cook fettuccine according to package directions.
  2. Heat a small saute pan over medium heat.
  3. Drizzle in olive oil, and add the mushrooms, scallion and the pepperoni.
  4. Cook until mushrooms are soft.
  5. About 5 minutes before the pasta is done, add the spinach to the mushroom pan and wilt.
  6. Drain pasta and drizzle with a little olive oil.
  7. Add seasonings and everything else.
  8. Serve warm.

I love to put greens in my pasta. Sprinkle a little grated parmesan on my plate at the table and I'm there. =)
