How to make it

  • Peel the carrots
  • Quarter and core the quinces, don't peel
  • Slice each quarter into 1/2 inch slices
  • Slice carrots into 1/2 inch slices
  • Heat the oil in a large skillet over medium heat
  • Toss in the carrots and quinces and braise them for about 8-10 minutes, or until medium-tender
  • Serve hot

    Quinces are so wonderful and so hard to find, unfortunately :( I remember my mom making a quince and chicken meal that was delicious. I have never tried them with carrots, but I can definitely see the complementary tastes in them.
