How to make it

  • Saute celery and mushrooms in butter for 3 minutes
  • Add carrots and continue to cook 3 more minutes
  • Season with pepper and sage
  • Continue to cook until liquid evaporated, stirring occasionally
  • Add broth and bring to a low boil, then reduce to a simmer and cover
  • Continue to cook for 10 minutes
  • Stir in turkey, wild rice and sherry
  • While stirring, slowly pour the cream in and heat through but do not boil.
