Turkey And Wild Rice Bisque Recipe
As with all turkey soups, this falls into the "great for Thanksgiving left-overs" category. That not withstanding, it's a great soup course for fall and winter.

Ingredients
  • 8 oz prepared wild rice
  • 2 Tbsp butter/margarine
  • 6 oz mushroom caps (ports, shiitake, oyster etc.), sliced
  • 1 Sm carrot, grated
  • 2 Med stalk celery, thinly sliced
  • 1 Qt chicken stock
  • 2 1/2 C cooked turkey
  • 1 C cream
  • 1/2 tsp ground black pepper
  • 1/8 tsp sage
  • 1 1/2 Tbsp dry sherry

Directions
  1. Saute celery and mushrooms in butter for 3 minutes
  2. Add carrots and continue to cook 3 more minutes
  3. Season with pepper and sage
  4. Continue to cook until liquid evaporated, stirring occasionally
  5. Add broth and bring to a low boil, then reduce to a simmer and cover
  6. Continue to cook for 10 minutes
  7. Stir in turkey, wild rice and sherry
  8. While stirring, slowly pour the cream in and heat through but do not boil.
