Turkey And Wild Rice Bisque Recipe

Ingredients

8 oz prepared wild rice

2 Tbsp butter/margarine

6 oz mushroom caps (ports, shiitake, oyster etc.), sliced

1 Sm carrot, grated

2 Med stalk celery, thinly sliced

1 Qt chicken stock

2 1/2 C cooked turkey

1 C cream

1/2 tsp ground black pepper

1/8 tsp sage

1 1/2 Tbsp dry sherry

Directions

Saute celery and mushrooms in butter for 3 minutes

Add carrots and continue to cook 3 more minutes

Season with pepper and sage

Continue to cook until liquid evaporated, stirring occasionally

Add broth and bring to a low boil, then reduce to a simmer and cover

Continue to cook for 10 minutes

Stir in turkey, wild rice and sherry

While stirring, slowly pour the cream in and heat through but do not boil.
