How to make it

  • Heat oil in a large Dutch oven or kettle over moderately high heat.
  • Brown venison and ground beef in batches, transferring each to a
  • bowl when browned; leave liquid in pot. Cook onion, green pepper,
  • celery, garlic and chiles in beef juices, stirring until onion is soft.
  • Add masa harina, chili powder, Add cayenne, cumin, pepper and
  • salt and cook 5 minutes, stirring constantly. Add tomatoes, beef
  • broth and meat; simmer, uncovered, 1 1/2 hours, or until meat is
  • tender. Stir in beans and simmer 15 minutes more.

    This stuff is fantastic. I was a little apprehensive due to the volume of ingredients, but I struggled through it and it is awesome stuff! I think I have a new secret family recipe!

    Put together this recipe and it was really good. Having the hamburger helped calm down the wildness of the venison. I omitted the black beans per a guest's request but next time I'll be adding them. Enjoyed the thickness of this dish. Everyone, including some that didn't care too much for venison, liked it and gave several compliments. I bet this recipe would be great with sasauge as well. Try it!
