How to make it

  • Preheat the oven to 400 degrees F/200 degrees C.
  • Line 10 cups of a 12 cup muffin pan with muffin paper liners.
  • Sift the flour, baking powder, and salt into a bowl, then stir in the cormeal and 1 cup of cheese
  • Place the melted butter, eggs, and milk in a separate bowl.
  • Add the wet ingredients to the dry ingredients and mix gently until just combined.
  • Divide the batter evenly between the paper liners. sprinkle over the remaining cheese, and bake in the oven for 25 minutes, or until risen and golden.
  • Remove from the oven and serve warm, or place on a cooling rack and let cool.

    Thank you Elle, that was kind of you. I have a flour mill and grind my own cornmeal, so the popping corn was ground very fine and was still warm from the milling when I put the recipe together yesterday. It's an old recipe but a goodie. I hope you wil be my cooking buddy?
    I also just break the cheese into bits for the top and push them in well.

    oops--I think you left out the cornmeal.. ;)
    I really want to try these! We used to get a cheddar cornmeal muffin at a little hole in the wall breakfast place, and they were so good! I haven't been able to duplicate them yet. I don't know what set theirs apart, but I intend to figure it out eventually, lol.
