Cheese Muffins

- Generous 3/4 cup white flour shopping list
- 1tbsp baking powder shopping list
- 1 tsp salt shopping list
- 1 1/2 cups grated sharp cheddar cheese shopping list
- 4 tbsp butter, melted shopping list
- 2 large eggs, beaten shopping list
- 1 1/4 cups milk shopping list
- 1 1/2 cups fine cornmeal shopping list
How to make it
- Preheat the oven to 400 degrees F/200 degrees C.
- Line 10 cups of a 12 cup muffin pan with muffin paper liners.
- Sift the flour, baking powder, and salt into a bowl, then stir in the cormeal and 1 cup of cheese
- Place the melted butter, eggs, and milk in a separate bowl.
- Add the wet ingredients to the dry ingredients and mix gently until just combined.
- Divide the batter evenly between the paper liners. sprinkle over the remaining cheese, and bake in the oven for 25 minutes, or until risen and golden.
- Remove from the oven and serve warm, or place on a cooling rack and let cool.
