Chicken Stuffed Shells Recipe
A dressed up version of basic stuffed shells that makes a filling main dish and sneaks some veggies into your family. We enjoy this with salad and garlic bread, and it freezes well.

Ingredients
  • 14 jumbo shells
  • 1 egg
  • ½ cup cottage cheese
  • 1 chicken breast
  • ½ cup matchstick carrots, chopped
  • ¼ box of spinach, thawed/drained
  • 2 cloves garlic, smashed
  • ¼ tsp salt
  • ¼ tsp nutmeg
  • ¼ cup breadcrumbs
  • 1 jar spaghetti sauce
  • ½ cup shredded mozzarella cheese

Directions
  1. Bake chicken.
  2. Meanwhile, cook shells. Add matchsticks to pasta water for the last few minutes to soften. Drain shells and rinse with cold water.
  3. Chop chicken into small pieces.
  4. Stir egg, cottage cheese, chicken, carrots, garlic, spinach, salt, and nutmeg, and breadcrumbs together.
  5. Pour 1/3 jar sauce into bottom of a 9x9 baking dish.
  6. Spoon filling into shells and arrange them in the dish.
  7. Pour remaining spaghetti sauce over the top of the dish.
  8. Cover and bake at 350 for 20 minutes.
  9. Remove and top with shredded mozzarella.
  10. Return to oven for 10 minutes uncovered.

Alterations


If you need the carrots to be less obvious, use grated carrot instead, no need to soften them and they'll blend in better.
