This is very good and smells wonderful when cooking. You can add pretty much anything you want. I have added celery, carrots, jalapeno peppers and corn. Depends what is in the fridge. Serve with a crusty garlic bread.

Sounds wonderful! I've been looking for good zucchini recipes. :) My Mom used to cook zucchini with canned crushed tomatoes and then melt mozzarella on top----it was really good. Thanks for sharing your recipe. :)

A down-home satisfying one-pot meal and an excellent way to use the bounty of zucchinis that's just starting to arrive this summer. I used Boca Crumbles instead of ground beef to make the dish vegetarian, and I added some olive oil since the Crumbles aren't greasy. Also added just a dash of cayenne. Served with garlic bread and a salad. Will make again!
