This delicious recipe for a light and fluffy casserole makes use of the extra turnips you have from your garden harvest. Healthy and delicious, this is a good way to prepare turnips for those who are not normally big turnip fans!

Ingredients
  • 2 cups cooked, mashed turnips, cooled
  • 1 cup whole grain or whole wheat bread crumbs
  • 2 tbsp melted butter or margarine
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 eggs, separated

Directions
  1. Combine turnips, bread crumbs, margarine, sugar, salt, pepper, and beaten egg yolks.
  2. Beat egg whites until stiff peaks form.
  3. Fold egg whites into turnip mixture.
  4. Spoon turnip mixture into buttered 1 quart caserole dish. Bake for 40 minutes at 350.
