How to make it

  • Preparare la pasta per la pizza setacciando la farina con il livito, aggiungere l'acqua tiepida e l'olio. una volta amalgamato unire il sale e lavorare bene (nel Kenwood a velocità 4 per 15 min.) Far lievitare fino al raddoppio (oggi ci sono volute 2 ore!)
  • Mentre la pasta lievita: pulire bene le scarole tagliarle e sbianchirle per 2 min. in acqua bollente salata (perdono un po' di amaro). Scolare bene e saltare in padella con olio, aglio, peperoncino e capperi. Lasciare freddare.
  • Scaldare il forno al massimo (250°)
  • Dividere la pasta in due parti. Stendere a mano (seza mattarello) la prima parte in una teglia foderata con la carta da forno e spennellata di olio. Adagiarvici la scarola allargandola uniformemente. Stendere la seconda parte di pasta e foderare la pizza. Arrotolare i bordi per chiudere bene il tutto. Ungere con abbonante olio e cospargere con sale grosso la pizza.
  • Infornare fino a che non sia bella dorata.

    I really love the look of this one. I will have to use my Italian Translator to know what the ingredients are in English, but it looks like it is worth it!

    I am delighted to run come across another talented Italian friend here!
