Impossible Pie Recipe
I use Impossible Pies a lot during Lent with a salad and garlic bread or rolls.

Ingredients
  • 1 small zucchini chopped (1 cup)
  • 1 large tomato, chopped (1 cup)
  • 1 medium onion, chopped (1/2 cup)
  • 1/3 cup grated parmesan cheese
  • 1/2 cup bisquick (or mix your own)
  • 1 cup milk
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 2 eggs

Directions
  1. 1. Heat oven 400 degrees. Grease 9" pie plate
  2. 2. Layer zucchini, tomato, onion, and cheese in plate
  3. 3. Stir remaining ingredients until blended. Pour into pie plate.
  4. 4. Bake 35 minutes or till knife inserted in center comes out clean.
  5. 5. Let stand 5 minutes before serving

I make them all the time too and they're good, simple food. If you make your own bisquick it's even better!
