How to make it

  • Cut spare ribs into 2 or 3 ribs each
  • Place in a large covered roasting pan and sprinkle with salt and pepper
  • Roast in hot oven (450 F for about 1 1/2 hrs. turning occasionally until brown.
  • Reduce heat for 1 hr. uncovered (350 F)
  • Remove from oven and pour off fat, (you can reserve enough to make gravy)
  • Add sauerkraut, apple,pepper and onions, (this mixture can be made during the time ribs are baking)
  • Cover and return to oven (350 F) for about another 1 1/2 hrs. or until ribs are tender and meat falls off the ribs
  • We serve this with mashed potatoes.

    Love ribs and kraut, this sounds very good. Great post. I'm assuming you meant teaspoons for the pepper, am I right?
