Italian Chicken and Rice

- 12 oz. skinless, boneless chicken breast halves, cut in strips shopping list
- 1/2 cup chopped onion shopping list
- 1 cup chicken broth shopping list
- 1 can (14.5 oz.) diced tomatoes with basil, garlic and oregano shopping list
- 1 1/2 cups instant white rice shopping list
- 1 can (14.5 oz.) French style green beans, drained shopping list
How to make it
- Coat large skillet lightly with nonstick cooking spray
- Heat over medium-high heat
- Add chicken and onion
- Cook and stir for about 3 minutes or until chicken is no longer pink
- Carefully stir in broth and undrained tomatoes
- Bring to a boil
- Stir in rice and beans
- Reduce heat
- Simmer covered for 5 minutes
- Remove from heat
- Let stand 3 minutes covered
- Serve with grated parmesan cheese, if desired
