Fresh Pinto Beans In Olive OIl Recipe
FRESH PINTO BEANS IN OLIVE OIL This recipe came from an estate sale. I obtained it when I purchased the family collection from the Williams Estate in Tyler, Texas in 1994.

Ingredients
  • 1-1/2 pounds shelled pinto beans
  • 8 tablespoons olive oil
  • 1/2 pound medium onion diced
  • 1/2 pound large tomatoes diced
  • 1/2 red bell pepper cut into small strips
  • 1/2 green bell pepper cut into small strips
  • 1 teaspoon salt
  • 1/4 teaspoon sugar
  • 3 tablespoons parsley leaves for garnish
  • 1 quart water

Directions
  1. Put everything except pinto beans, parsley and water in a large pot then cook 7 minutes. Add pinto beans and water and bring to a boil.
  2. Lower heat and simmer covered for 2-1/2 hours then pour in a large bowl.
  3. After it is cooled spread parsley leaves on and cover.
  4. Serve cold or at room temperature.
