Fresh Pinto Beans In Olive OIl

- 1-1/2 pounds shelled pinto beans shopping list
- 8 tablespoons olive oil shopping list
- 1/2 pound medium onion diced shopping list
- 1/2 pound large tomatoes diced shopping list
- 1/2 red bell pepper cut into small strips shopping list
- 1/2 green bell pepper cut into small strips shopping list
- 1 teaspoon salt shopping list
- 1/4 teaspoon sugar shopping list
- 3 tablespoons parsley leaves for garnish shopping list
- 1 quart water shopping list
How to make it
- Put everything except pinto beans, parsley and water in a large pot then cook 7 minutes. Add pinto beans and water and bring to a boil.
- Lower heat and simmer covered for 2-1/2 hours then pour in a large bowl.
- After it is cooled spread parsley leaves on and cover.
- Serve cold or at room temperature.
