Chili Borracho

- 3 tablespoons olive oil shopping list
- 3 lbs beef brisket cut into 1/4 inch cubes shopping list
- 1 large onion chopped shopping list
- 1 cubanelle pepper chopped shopping list
- 1 jalapeno, chopped or if you're really brave 1 habanero chopped shopping list
- 6 garlic chopped shopping list
- 1/2 lb ground pork shopping list
- 1 tablespoon cumin shopping list
- 5 tablespoons chili powder shopping list
- 1/4 teaspoon oregano shopping list
- 1 teaspoon dry mustard shopping list
- 1 small can plain tomato sauce shopping list
- 1 cup canned whole tomatoes shopping list
- 1 small can chopped mild green chilis shopping list
- 1 small can chopped HOT green chilis shopping list
- 1 chopped chipolte shopping list
- 2 teaspoons brown sugar shopping list
- 2 TB adobo sauce from a can of chipoltes, shopping list
- 1 can beer shopping list
- 1/4 cup bourbon shopping list
- 1/4 cup tequila shopping list
How to make it
- In a large frying pan, saute the beef in olive oil until brown. Transfer beef to a large pot.
- Saute onion, cubanelle pepper, jalapeno and garlic till soft. Place in pot with beef.
- Saute ground pork until thoroughly cooked, drain and add to the pot.
- Add all other ingredients. Bring to a boil, then turn heat down and simmer on VERY LOW for 3-4 hours.
- Serve as is with saltines or over rice, top with fresh chopped onions, grated cheese, and/or sour cream
