Port-Simmered Prunes With Mascapone Recipe
Sweet prunes simmered in whole spices,nestled in mascarpone or served with ice cream.

  • 30 pitted prunes
  • 13/c dry red wine
  • 3/4c tawney port
  • 3/4c plus 1 Tbs. sugar
  • 2 cinnamon sticks
  • 5 whole cloves
  • 5 whole allspice berries
  • 1 star anise
  • 2c mascarpone9creamy Italian cheese)
  • grated rind of 1 lemon

Directions
  1. In a medium heavy saucepan,combine prunes,wine,port,3/4c sugar,cinnamon,cloves,allspice and star anise. Bring to a boil over med-high heat. Lower the heat and simmer gently about 45 mins. or until the liquid turns syrupy. Cool slightly. Remove the cinnamon,cloves,allspice and staranise from the liquid
  2. In a medium bowl,combine the mascarpone,lemon rind and remaining 1 Tbs sugar. On each of 6 dessert plates,place a 1/3c mound of mascarpone. Using a spoon,spread it into a wide well. Set 5 prunes in the center of each well and top with syrup.
