How to make it

  • Heat the soup pot, dice the bacon slices and melt them on the bottom of the pot a little
  • If you were lucky to find any ham bones or smoked turkey bones in your fridge, throw them in at this time, and sear them on all sides in the bacon grease until pleasantly browned
  • Toss in the onions and carrots at this time, saute until fragrant and onion is translucent
  • Dice all meat trimmings in a uniform way - small dice or shredding is fine; add meat to the pot and saute 4-5 minutes.
  • Add about 6 cups of water or chicken stock, or a combination of both (cover meats and then some 1/2 inch above its level)
  • Add kidney beans with juice
  • Bring to boil rapidly
  • Add salt, pepper, paprika and chili pepper.
  • Reduce heat to medium-low and simmer for 20-30 minutes, COVERED
  • Season with your favorite herbs

  • Process your soup in batches in a blender (remove the bones), until it has uniform consistency, not necessarily until smooth

  • Serve with a tbsp of sour cream and a handful of small croĆ»tons
