Salmon Cakes Recipe
This simple recipe came via my mother. Interestingly, my wife loves these. It's just something a little bit different. The original recipe called for 3 egg whites and a little milk instead of mayonnaise.

Ingredients
  • 2/3 pound fresh salmon fillets
  • 2 stalks celery, chopped
  • 1/2 onion, chopped
  • 2 tablespoons parsley
  • 2 tablespoons mayonnaise
  • 1/2 cup dry bread crumbs, up to 1 cup
  • salt and pepper, to taste
  • 2 tablespoons olive oil

Directions
  1. Bake salmon. Remove skin. Flake salmon.
  2. Add celery, onion, mayonnaise, bread crumbs, and parsley. Mix.
  3. Form patties.
  4. Heat olive oil in a cast-iron skillet. Fry patties until golden brown (one can bake these too).
