Adobe Black Bean Sauce Recipe
From Pink Adobe years ago. Quick, easy. Adds special dimension to pork, steak, or roast beef. May serve with cumin rice, fresh avocados and pineapple, and tortillas.

Ingredients
  • 4 tablespoons olive oil
  • 3/4 cup onion, finely diced
  • 1/4 cup diced green bell pepper
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced yellow bell pepper
  • 1 teaspoon sliced fresh jalapeno pepper
  • 2 cups chopped fresh tomatoes
  • 2 cups cooked black beans (better if you cook 'em, but can beans may be used)
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon sugar
  • Salt, freshly ground pepper to taste
  • NOTE: the recipe does not call for garlic, but may add fresh minced garlic

Directions
  1. In large 12 inch skillet or saute' pan, place olive oil, and saute' onion, bell peppers, jalapeno for about 5 minutes
  2. Stir constantly
  3. Add tomatoes and stir
  4. Add cooked beans, cook for about 2 minutes
  5. Remove from heat and stir in lime juice, sugar, salt, pepper
