How to make it

  • Combine yoghurt, garama masala, garlic, turmeric, ginger and lemon juice in a large bowl
  • Add chicken wing/ettes
  • Toss to coat
  • Cover
  • Refrigerate for at least 2 hours or overnight if time permits (longer better)
  • Preheat oven to 200 deg C
  • Line an oven tray with baking paper
  • Place a wire rack on paper
  • Arrange chicken wings in a single layer on rack
  • Roast for 30-45 mins or until golden and cooked through
  • Serve with rice and pappadums
