Ingredients
  • 1 lb Skinless Boneless Chicken Thighs
  • 1 1/2 Tbs Soy Sauce
  • 2 Large garlic cloves chopped
  • 1 TB ginger finely chopped and peeled
  • 2 Tsp Vegetable oil
  • 1 2 lb head of Bk Choy
  • 2 Tsp Medium dry Sherry
  • 1 Tbs Cornstarch
  • 1 1/2 tsp sugar
  • 1 (15 oz can) straw mushrooms drained
  • 1 ( 14 oz Can) baby corn rinsed and drained

Directions
  1. Cut chicken across the grain into 1 inch pieces and toss in soy sauce,garlic, ginger and salt.
  2. Heat oil in sturdy skillet over high heat and cook chicken in one layer without stirring. about 2 minutes.
  3. while Chicken cooks cut boy choy into half inch pieces.Add to chicken and cook covered until Bok choy is tender about 4 minutes.
  4. Stir together Sherry Cornstarch and sugar.
  5. Stir mushrooms baby corn and the Sherry liquid together and into Chicken mixture and simmer uncovered until sauce is thickened and chicken cooked through-2 minutes.
  6. Serve over rice.
