Chicken with Bok Choy n BabyCorn

- 1 lb Skinless boneless chicken thighs shopping list
- 1 1/2 Tbs soy sauce shopping list
- 2 Large garlic cloves chopped shopping list
- 1 TB ginger finely chopped and peeled shopping list
- 2 Tsp vegetable oil shopping list
- 1 2 lb head of Bk Choy shopping list
- 2 Tsp Medium dry sherry shopping list
- 1 Tbs cornstarch shopping list
- 1 1/2 tsp sugar shopping list
- 1 (15 oz can) straw mushrooms drained shopping list
- 1 ( 14 oz Can) baby corn rinsed and drained shopping list
How to make it
- Cut chicken across the grain into 1 inch pieces and toss in soy sauce,garlic, ginger and salt.
- Heat oil in sturdy skillet over high heat and cook chicken in one layer without stirring. about 2 minutes.
- while Chicken cooks cut boy choy into half inch pieces.Add to chicken and cook covered until Bok choy is tender about 4 minutes.
- Stir together Sherry Cornstarch and sugar.
- Stir mushrooms baby corn and the Sherry liquid together and into Chicken mixture and simmer uncovered until sauce is thickened and chicken cooked through-2 minutes.
- Serve over rice.
