Smoked Salmon And Herb Muffins Recipe
These are so incredibly good. I don't make them often again but going through my muffin files just now made me realize how good they are and I'm going to make them for Easter Sunday. Hope you enjoy as much as I do.

Ingredients
  • 3 cups flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon granulated sugar
  • 3 eggs
  • 1-1/2 cups milk
  • 2 ounces butter
  • 2 ounces smoked salmon sliced
  • 1/2 cup chopped mixed fresh herbs such tarragon, chives, parsley or coriander
  • 1/2 cup sour cream

Directions
  1. Preheat oven to 400.
  2. Prepare muffin tins.
  3. Sift flour, baking powder and salt into a mixing bowl then stir in sugar and herbs.
  4. Beat eggs and milk together.
  5. Melt butter then add milk mixture and butter to the dry ingredients.
  6. Mix lightly with a fork and spoon into pans.
  7. Bake for 12 minutes.
  8. Combine salmon and sour cream until well combined and spread over warm muffins.
