Mississippi Mud Cake

- 1 cup butter or margarine shopping list
- 2 cups sugar shopping list
- 1/2 cup baking cocoa shopping list
- 4 eggs shopping list
- 1 teaspoon vanilla extract shopping list
- 1 1/2 cup self rising flour shopping list
- 1 cup chopped pecans shopping list
- 1 cup shredded coconut-optional shopping list
- 1 7oz jar marshmallow creme shopping list
- Icing: shopping list
- 4 cups confectioners sugar shopping list
- 1/2 cup butter or margarine shopping list
- 1/2 cup milk shopping list
- 1/2 cup baking cocoa shopping list
- 1 teaspoon vanilla shopping list
How to make it
- Preheat oven to 350 degrees.
- Grease and flour one 9" x 13" x 2" pan.
- In a large mixing bowl,cream sugar and butter until fluffy.
- Add eggs one at a time,mix well after each addition.
- Add vanilla.
- Sift together flour and cocoa and add to butter mixture.
- Fold in pecans and coconut.
- Spread batter into prepared pan.
- Bake 30 minutes.
- While still hot,spread on marshmallow creme.
- Mix icing ingredients and pour over top.
- Serve warm or cooled.
