Banana Cream Cheesecake

- 20 vanilla cream-filled sandwich cookies shopping list
- ¼ cup margarine, melted shopping list
- 24 ounces cream cheese, softened shopping list
- 2/3 cup sugar shopping list
- 2 tablespoons cornstarch shopping list
- 3 eggs shopping list
- ¾ cup mashed bananas shopping list
- ½ cup whipping cream shopping list
- 2 teaspoons vanilla extract shopping list
How to make it
- Process cookies in food processor with pulses to fine crumbs
- Add margarine and process with pulses until thoroughly combined
- Press mixture into bottom of 10” springform pan, refrigerate
- Beat cream cheese until creamy
- Beat in sugar and cornstarch
- Beat in eggs, one at a time
- Beat in bananas, whipping cream, and vanilla
- Pour mixture into crust
- Place pan on cookie sheet and bake in a 350° oven for 15 minutes
- Reduce oven temperature to 225°, bake an additional 75 minutes, or until center is almost set
- Allow to cool completely before removing rim of pan
- Refrigerate cheesecake, uncovered, at least 6 hours
- Top with fresh whipped cream
