Black-eyed Pea Casserole Recipe
This recipe came from a magazine that the power company sends out so I am not sure who to give credit to, but it is a meal all by itself. Would probably be a good dip also.

Ingredients
  • 2 packages (6 oz. each) long grain and wild rice mix
  • 2 pounds of ground beef or sausage is good also
  • 2 medium onions, chopped
  • 2 small green peppers, chopped
  • 4 cans (16 oz. each) black eyed peas with jalapenos, rinsed and drained
  • 2 cans condensed cream of mushroom soup, undiluted
  • 2 cups of shredded cheddar cheese ( I like sharp)

Directions
  1. In a large sauce pan cook rice mixes according to the instructions on the package
  2. Meanwhile in a large skillet cook the beef, onions, and peppers until the beef is browned and drain.
  3. In a large mixing bowl, combine peas, soup, rice and beef mixture and mix well
  4. Transfer ingredients to two greased (I use spray pam) 2 1/2 quart casserole dishes and spread evenly
  5. Cover and bake at 350 degrees for 30-35 mins. until heated through
  6. Uncover and sprinkle with cheese and bake 5 min. longer or until chees is melted.
