Black-eyed Pea Casserole

- 2 packages (6 oz. each) long grain and wild rice mix shopping list
- 2 pounds of ground beef or sausage is good also shopping list
- 2 medium onions, chopped shopping list
- 2 small green peppers, chopped shopping list
- 4 cans (16 oz. each) black eyed peas with jalapenos, rinsed and drained shopping list
- 2 cans condensed cream of mushroom soup, undiluted shopping list
- 2 cups of shredded cheddar cheese ( I like sharp) shopping list
How to make it
- In a large sauce pan cook rice mixes according to the instructions on the package
- Meanwhile in a large skillet cook the beef, onions, and peppers until the beef is browned and drain.
- In a large mixing bowl, combine peas, soup, rice and beef mixture and mix well
- Transfer ingredients to two greased (I use spray pam) 2 1/2 quart casserole dishes and spread evenly
- Cover and bake at 350 degrees for 30-35 mins. until heated through
- Uncover and sprinkle with cheese and bake 5 min. longer or until chees is melted.
