White Chicken Chili Recipe
This chili is great served over brown rice and finished with a little shredded cheese and sour cream.

Ingredients
  • 3 10 ½ ounce cans of chicken broth
  • 19 ounce can of cannelli beans
  • 2 (16 ounce) can of navy beans
  • 4 cups cooked chicken breast
  • 1 cup diced onion
  • 16 ounces frozen white corn
  • 4 ounces canned chilies
  • 1 teaspoon cumin
  • 3/4 teaspoon oregano
  • 1/4 teaspoon red pepper flakes

Directions
  1. Sautee onions until tender, then put into large stock pot
  2. Rinse one can of navy beans and puree in blender with a little chicken broth, then add to pot
  3. Rinse remaining 2 cans of beans
  4. Place all ingredients in pot and let simmer until done, about ½ hour
  5. Serve over rice
