Make any combination of vegetables into a frittata. Serve hot or cold, with extra veg and salad if desired. Can be used as a main for vegos or as a side to the carnivores at the same meal sitting.

Ingredients
  • 1/4 cup olive oil
  • 1 onion, finely chopped
  • 1 small carrot, grated
  • 1 small zucchini (courgette), grated
  • 1 cup grated pumpkin
  • 4 tblspns finely dixed jarlsburg or cheddar cheese
  • 1/2 tpsn salt
  • 1/2 tspn ground black pepper
  • 5 free range eggs

Directions
  1. Heat 2 tblspns oil in a frying pan
  2. Add onion and cook gently for 5 mins or until soft
  3. Add carrot, zucchini and pumpkin
  4. Cover pan and cook over low hat for 3 mins
  5. Transfer to a bowl and cool
  6. Stir in cheese, salt and pepper
  7. Beat eggs and add to the vegetable mix
  8. Heat remaining oi in a small frying pan
  9. When hot add the egg & veg mix and shake pan to spread the mix over the base
  10. Reduce heat to low and cook for 3 mins or until mix is almost set
  11. Tilt pan and lift edges occasionally during cooking to allow uncooked egg to flow underneath
  12. For the final touch, place under a medium grill to crisp the top
  13. Cut frittata into wedges and serve immediately
  14. Garnish with fresh herbs
