mixed vegetable frittata

- 1/4 cup olive oil shopping list
- 1 onion, finely chopped shopping list
- 1 small carrot, grated shopping list
- 1 small zucchini (courgette), grated shopping list
- 1 cup grated pumpkin shopping list
- 4 tblspns finely dixed jarlsburg or cheddar cheese shopping list
- 1/2 tpsn salt shopping list
- 1/2 tspn ground black pepper shopping list
- 5 free range eggs shopping list
How to make it
- Heat 2 tblspns oil in a frying pan
- Add onion and cook gently for 5 mins or until soft
- Add carrot, zucchini and pumpkin
- Cover pan and cook over low hat for 3 mins
- Transfer to a bowl and cool
- Stir in cheese, salt and pepper
- Beat eggs and add to the vegetable mix
- Heat remaining oi in a small frying pan
- When hot add the egg & veg mix and shake pan to spread the mix over the base
- Reduce heat to low and cook for 3 mins or until mix is almost set
- Tilt pan and lift edges occasionally during cooking to allow uncooked egg to flow underneath
- For the final touch, place under a medium grill to crisp the top
- Cut frittata into wedges and serve immediately
- Garnish with fresh herbs
