How to make it

  • Heat 750mL oil in a pan
  • Cook the vegetable chips or herbs in hot oil in batches until they are crisp and browned
  • Drain on paper towels and keep warm in a preheated moderate 180 degC oven while cooking remainder
  • A blend of whole egg mayonnaise, lime juice and curry powder
  • Chopped sun dried tomatoes and natural yoghurt
  • Sweet Thai Chilli Sauce, lime juice and chopped fresh coriander (cilantro)
