Rhubarb Crumble Pie Recipe
Easy rhubarb crumble pie with lots of rhubarb. Simple to make.

Ingredients
  • 1 cup sugar
  • 1 ½ tablespoons flour
  • 1 egg, beaten
  • ¼ teaspoon cinnamon
  • 2 ¾ cups coarsely chopped rhubarb
  • 1 - 8” unbaked pie shell
  • Crumb Topping:
  • ½ cup flour
  • ¼ cup brown sugar
  • 1/8 cup butter
  • ¼ teaspoon baking soda
  • ¼ teaspoon baking powder

Directions
  1. Filling:
  2. Combine sugar, flour and eggs. Stir to form a thick paste.
  3. Fold in rhubarb pieces.
  4. Spoon into unbaked pie shell.
  5. Crumb Topping:
  6. Combine all crumb topping ingredients and mix well.
  7. Sprinkle evenly over rhubarb mixture.
  8. Bake at 400ºF for 10 min.
  9. Reduce heat to 350ºF and bake 40-50 minutes more.
