How to make it

  • A) Peel pears and level off the bottom so they will stand up right.
  • b)Bring sugar, water, ,lemon juice and wine to heat , reduce heat to simmer, add in the pears.
  • c)To make ganache, boil cream in medium saucepan over moderate heat until reduce by a third. Remove from heat, add chocolate milk. Set aside to cool until thick enough to pipe.
  • d)Drain pears, cut the top third of each one off, pipe ganache on to the pear, replace the top of the pear.
  • Note: Its important to choose very firm pears to avoid breaking during cooking. Use red wine to obtain colored pears
