Ingredients
  • ~ 4 firm pears, stem intact
  • ~ 1 cup caster sugar
  • ~ 3 cups water
  • ~2 tablespoons freshly squeezed lemon juice
  • ~1 cup sweet wine
  • ~3/4 cup double cream
  • ~100g or 31/2oz milk chocolate

Directions
  1. A) Peel pears and level off the bottom so they will stand up right.
  2. b)Bring sugar, water, ,lemon juice and wine to heat , reduce heat to simmer, add in the pears.
  3. c)To make ganache, boil cream in medium saucepan over moderate heat until reduce by a third. Remove from heat, add chocolate milk. Set aside to cool until thick enough to pipe.
  4. d)Drain pears, cut the top third of each one off, pipe ganache on to the pear, replace the top of the pear.
  5. Note: Its important to choose very firm pears to avoid breaking during cooking. Use red wine to obtain colored pears

This sounds lovely. But is it milk chocolate (liquid) or milk chocolate (solid)?

Alterations


May I suggest scooping the core from the bottom with a parisienne cutter/melon baller, fill hole with ganache, a suprise pear, maybe with a cream sauce?.
