Poached Pears With Chocolate Ganache

- ~ 4 firm pears, stem intact shopping list
- ~ 1 cup caster sugar shopping list
- ~ 3 cups water shopping list
- ~2 tablespoons freshly squeezed lemon juice shopping list
- ~1 cup sweet wine shopping list
- ~3/4 cup double cream shopping list
- ~100g or 31/2oz milk chocolate shopping list
How to make it
- A) Peel pears and level off the bottom so they will stand up right.
- b)Bring sugar, water, ,lemon juice and wine to heat , reduce heat to simmer, add in the pears.
- c)To make ganache, boil cream in medium saucepan over moderate heat until reduce by a third. Remove from heat, add chocolate milk. Set aside to cool until thick enough to pipe.
- d)Drain pears, cut the top third of each one off, pipe ganache on to the pear, replace the top of the pear.
- Note: Its important to choose very firm pears to avoid breaking during cooking. Use red wine to obtain colored pears
