Jackie Valents Morroccan Bulgar Wheat Salad

- 3 cups bulgar wheat shopping list
- 2 1/2 cups boiling water shopping list
- 8 tbsp. olive oil shopping list
- 6 tbsp. lemon juice shopping list
- salt and pepper to taste shopping list
- 4 tbsp. chopped fresh mint shopping list
- 6 tbsp. chopped fresh cilantro shopping list
- 2 roasted red bell peppers from a jar, chopped (About 3/4 cup) shopping list
- 2 bunches of green onions (green and white) chopped shopping list
- 1 medium cucumber shopping list
- 4 cups crumbled feta cheese shopping list
How to make it
- Place bulgar in large bowl, add boiling water and leave to soak 30 minutes, stirring occasionaly with fork, until water has been absorbed
- In mixing bowl, whisk together oil, lemon juice, salt and pepper
- Pour oil mixture over bulgar, add herbs and mix well
- Mix in remaining ingredients
- Cover and chill until ready to serve
- Serve cold or at room temperature
