Jackie Valents Morroccan Bulgar Wheat Salad Recipe

Ingredients
  • 3 cups bulgar wheat
  • 2 1/2 cups boiling water
  • 8 tbsp. olive oil
  • 6 tbsp. lemon juice
  • salt and pepper to taste
  • 4 tbsp. chopped fresh mint
  • 6 tbsp. chopped fresh cilantro
  • 2 roasted red bell peppers from a jar, chopped (About 3/4 cup)
  • 2 bunches of green onions (green and white) chopped
  • 1 medium cucumber
  • 4 cups crumbled feta cheese

Directions
  1. Place bulgar in large bowl, add boiling water and leave to soak 30 minutes, stirring occasionaly with fork, until water has been absorbed
  2. In mixing bowl, whisk together oil, lemon juice, salt and pepper
  3. Pour oil mixture over bulgar, add herbs and mix well
  4. Mix in remaining ingredients
  5. Cover and chill until ready to serve
  6. Serve cold or at room temperature
