Ingredients
  • crappie fillets boned or walleye fillets boned (12)
  • store bought seasoned flour(cajun style)
  • olive oil
  • fresh lemon pepper for grinding
  • lime zest
  • 1 zip lock bag

Directions
  1. each fillet no longer than four inches, part if neccessary
  2. heat oil until it spits water
  3. put four ounces of seasoned flour in zip lock bag and grind fresh lemon pepper until fragrant and very visible in bag.
  4. grate half of washed lime rind into zip lock
  5. two fillets at a time shake until coated
  6. drop in hot oil
  7. cook until edges go golden and flip
  8. drain and dry on paper towel
  9. grate lime rind over warm fillets for color and lightly top with ground lemon pepper
  10. serve asap
