Hearty Minestrone Soup Recipe

Ingredients
  • 1 cup onions diced
  • 1 tbl butter
  • 2 litres water/stock
  • 1 cup grated carrot
  • 1/2 cup kidney beans
  • 1/2 cup chickpeas
  • 1 cup of chopped bell pepper
  • 1 cup of macaroni
  • 2 tbl of flat leaf parsley
  • 1tsp basil
  • 1tsp oregano
  • 2 tsp soy sauce
  • 2 tbl tomato paste
  • salt and pepper

Directions
  1. Chop the onions, peppers and grate the carrots
  2. Saute the onions in the butter until browned
  3. Add the chckpeas, beans, tomato paste and 2 litres of liquid
  4. Cook slowly for 2 hrs
  5. Add the pepper,carrot and herbs Cook for 20 mins
  6. Add the macaroni and cook for a further 20 mins, adding more liquid if necessary

I forgot to say to garnish with the parsley and season.
