This dish, now often called Welsh rarebit is made of cheese, mustard and beer, blended together and served on toast. There are records of Caws pobi as early as the 16th century. For Bucks Rabbit, Serve it with a poached egg on top.

  • 4oz Cheddar cheese, grated
  • 3 T. ale or milk
  • 2 T. butter
  • 1 tsp mustard
  • 1 egg, beaten
  • 4 slices bread
  • butter

Directions
  1. Toast bread. Place toast on a baking tray ready for grilling and spread with butter.
  2. Put cheese in saucepan with ale or milk, butter and mustard.
  3. Cook over low heat until cheese melts, stirring continuously.
  4. Stir in beaten egg.
  5. Pour over toast, and brown under the grill.
